Recipe: Insalata Bianca
Serves 4 | Prep Time 10 minutes | Cooking Time 0

Ingredients
- 2 bulb fennel bulbs
- 2 stalks celery
- 2 belgian endives
- 5 medium radishes, any varietal is fine (black radishes are more bitter so be careful)
- 0.30 cup olive oil
- 1 tbsp lemon juice
- 1 tsp white vinegar
- 1 dash black pepper
- 1 dash kosher salt
Instructions
- Slice the fennel bulbs very thinly, with a knife or a mandoline
- Slice the celery into 1/16 inch strips
- Slice the belgian endive on the bias
- Slice the radishes ultra-thinly
- Mix the olive oil, lemon juice and white wine vinegar by whisking them together
- Mix all vegetables in a bowl and add the dressing Alternatively dress all ingredients individually and plate one by one in a visually appealing pattern
Notes
Use this recipe as a guide to inspire you. Any combination of white vegetables would work.
Feel free to add or subtract ingredients as you please. Think of combining this salad with hardy fruits, like an asian pear or a golden delicious apple.
